It is a goopy, molasses-like syrup which simply creates a more pleasant flavour in beer, and In recipes calling for large amounts of malt extract.

It might feel hectic to get all the LME into the boil, but it can easily be done by swishing around some hot water in the container to get all that sugary-goodness. LME can be purchased in sealed tins and pouches which can be stored for a long time. It is said to have a shelf life of up to two years under ideal conditions (cool, dark and dry), it does have the tendency to experience degradation over time. Most containers of Liquid malt extract state that malt extract will darken with heat and age.
